Gluten Free Veggie Burgers with Caramelized Onions and Lime-Garlic Aioli

Veggie Burgers:


1 cup French Lentils

2.5 cups water

2 Cinnamon sticks

1 tsp. Salt

1 tsp. Black Pepper

1 TBLS. onion powder

1/4 tsp. chili pepper flakes

1/2 tsp. smoked paprika

1/2 tsp. Allspice

1/2 tsp. dried thyme

1 TBLS. vegetable oil

Directions:  Bring lentils to boil with all herbs and spices.  Then simmer for about 25 minutes or until done and water is absorbed.  If there is extra water drain the lentils.  Remove from heat, remove cinnamon sticks, and add gluten free flour and as much water as needed so they are not too and not too dry.

Make into patties.

Grill or pan fry until medium dark on outside.

Carmalized Onion:


1 onion


Directions:  Half onion and slice onion into half rounds.  Pan fry slowly until golden and sweet.

Lime Garlic Aioli:


2 Eggs (raw)

2 limes (use juice and zest)

3 cloves fresh garlic

1/2- 1 cup veggie oil

salt and pepper

Directions:  blend garlic with oil.

put eggs in food processor, blender or bowl with stick blender with lime juice and salt and pepper.

while being mixed at high speed slowly add oil/garlic mix until it becomes firm.

season with salt and pepper.

Finally:  Toast some bread (gluten free if you wish) and put the Aioli on both pieces of the bread.  Take one piece of bread, put the  burger on top, then some onions, a tomato slice, a piece of lettuce, some ketchup and close it with the other piece of bread.
